I took a regular recipe and tweaked it and i've used it time and time again ;) Now for this i do use some white flour although i also used whole wheat. It just works for this!
Lemon cranberry muffins
1c whole wheat flour 1c white flour 1c splenda the baking kind 3 tsp baking powder 1/2 tsp salt 1 egg 2 egg whites 1c almond breeze(calls for milk but i like this) 1/2 apple sauce 1 tsp lemon extract 1c fresh or frozen cranberries
combine all dry ingredients. in another bowl combine the wet ingredients. Stir the wet into the dry until just moistened. Fold in the cranberries.
i use a silicone muffin sheet but if you use the normal you either want to spray with non-stick spray or used muffins papers. Bake at 400 for 20 mins or until a toothpick comes out clean.
Lunch: broccoli, carrots, cucumber, zucchini, cheese, hummus, ham, melon-7 Dinner: Steak on the bbq, 2x corn on the cob, salad, honey pear dressing, glass of red wine-10
Lunch: i have been assured that there will be lots of raw veggies, cheese and fruit and i might just have one of Miss B's famous cupcakes for dessert ;)
Breakfast: Swiss oatmeal-1/2c uncooked oats, 1/2 c frozen mixed berries, 100g ff yogurt, 10 g walnuts-5
Lunch: flat bread, cheese, proscuitto,turkey,raw veggies, roasted pepper dip, 2 peaches-10 Dinner to take to work: Leftover turkey sausage, mixed veggies, 1 tsp oil, potato, pineapple, minigo-8 And then i went home and ate and ate.....
Breakfast: 3 egg whites, ham, whole wheat english muffin, v-8-3
Lunch: weil bar, raw veggies, dip, blueberries and melon, flat bread, ham-11(this is what i had planned however i didn't feel very hungry so i had melon and blueberries and the weil bar ;)
